3 cups flour
2 tsp. cinnamon
2 tsp. baking soda
1½ tsp. salt
3 cups white sugar
1 can (15 oz.) prepared pumpkin
4 eggs
1 cup vegetable oil
½ cup apple juice or water
1 large apple (peeled, cored and diced)

Directions:

Grease and flour 2 9x5 inch loaf pans or use parchment paper. Combine flour, cinnamon, baking soda and salt in large bowl. Combine sugar, pumpkin, eggs, vegetable oil and apple juice in large mixer bowl. Beat just until blended. Add pumpkin mixture to flour mixture. Stir just until moistened. Fold in apple. Spoon into prepared loaf pans. Bake at 350º for 65 to 70 minutes or until toothpick inserted in center comes out clean. Cool completely on wire rack.
