Chicken Enchiladas Recipe

4 boneless chicken breast
1 onion, chopped
250mL sour cream
1 ¾ cup shredded cheddar cheese, divided
1 Tbsp dried parsley
½ tsp oregano
½ tsp black pepper
½ tsp salt (optional)
1 Tbsp chili powder
⅓ cup green peppers, chopped (I added more)
1 clove of garlic, minced
2 jars taco sauce
8 flour tortillas

1. In a medium, non-stick skillet over medium heat, cook the chicken and drain the excess fat. Cut up the chicken and return it to the skillet.
2. Add the onion, sour cream, 1 cup cheddar cheese, parsley, oregano and black pepper. Heat until the cheese melts.
3. Stir in salt, chili powder, green pepper, garlic and 1 jar of taco sauce.
4. Spoon even amounts of the mixture in the tortillas. Roll them up and place in a 9x13 inch baking dish. Cover with the second jar of taco sauce and remaining ¾ cup cheese.
5. Bake uncovered, in 350ºF oven for 20 minutes.
6. Cool 10 minutes before serving.
