Whole Wheat Bread Recipe

Ingredients: 1 cup warm water 1½ tsp yeast ¾ tsp salt 1 Tbsp sugar 1 Tbsp oil 1 cup whole wheat flour Approx. 2 cups white flour Ancient grains (soak in warm water first), wheat germ, oat bran, etc are optional
*If making a white loaf you will need a total of 3 cups (approx.) of white flour and change the salt and sugar to 1 tsp each

Directions:1. Pour water into a bowl and sprinkle the yeast on top. Let it sit a few minutes until the yeast begins to foam. 2. Add salt, sugar and oil and mix vigorously. 3. Add 1 cup whole wheat flour and mix with a wooden spoon (until batter is soft). At this step you can also add wheat germ, oat bran or whatever else you may want to add to your bread like whole grain seeds. 4. Add 1 cup white flour and mix in fully. Then add additional ½ cup white flour and work it in fully. 6. Add ¼ cup (or less) at a time now until stickiness is gone from the dough. When it becomes too hard to use a spoon, work the dough with your hand. 7. Knead the dough for 7 minutes – until it feels silky-smooth. 8. Form the dough into a flattened ball and rub a thin coating of oil over the surface of the dough. Then return the dough to the mixing bowl and cover it with a clean towel. 9. Put the dough in a warm, draft free place for around 70 minutes or until the dough has doubled in size. 10. Punch (or poke!) the dough down and take it out of the bowl and put it into a floured surface. 11. Press any large bubbles out of the dough. 12. Shape the dough and place it in a loaf pan. 13. Cover the loaf with a towel and let it rise again for around 45 minutes or until double in size. 14. Preheat the oven to 445º 15. Put loaf in middle of hot oven and bake for 13 minutes. 16. Reduce the temperature to 420º and cover your loaf loosely with foil and bake it for an additional 25 minutes. 17. Tap test to check for doneness (tap the bottom of your loaf…it should sound hollow) 18. Let cool on a wire rack. |
