4 ½ - 5 pound boneless Prime Rib Roast (get a larger one and trim the fat off if there is a lot of fat on top)
Salt and pepper, to taste

Let roast sit at rest on the counter for 30 minutes.

Preheat oven to 500ºF

Put salt and pepper on all sides of the roast.

Place roast on a rack on a baking sheet.

Place in the oven and cook for 25 minutes.

Turn the oven off and leave in the oven for 2 hours. DO NOT OPEN THE OVEN DOOR!!!

The roast will be medium-rare. If you want it cooked more, leave the heat on for a few more minutes, then turn the oven off and let it sit for 2 hours

Timing is very important with this roast. After 2 hours it will still be hot but you don't want to leave it in too much longer as it will continue to cook a little and start to cool.
