Clam Pizza Recipe

1 prepared pizza dough recipe
1 can chopped clams
6 minced garlic cloves
⅓ c. minced onion or shallots
4 T. olive oil, divided
2 T. butter
1 tsp. each oregano and parsley
½ tsp. salt
½ c. grated Parmigiano Reggiano cheese

Preheat oven to 475º.

Heat 2 T. olive oil in a small saucepan or deep skillet, add butter and swirl to melt. Add onions and cook about two minutes until translucent, then add garlic and cook just until fragrant. Drain the liquid from the clams into the pan, add the salt, oregano and parsley, cover and cook for about 5 minutes until it thickens.
Remove from heat and add reserved clams, stir to combine.

Brush the prepared pizza dough with remaining olive oil, spread the clam mixture evenly over the crust and top with cheese. Bake until crust is golden and topping is bubbly.

When we lived in New Jersey we used to drive all the way to New Haven CT just to get a pizza at Frank Peppe's Pizzeria. My favorite was the clam pie, and this is as close as I can come to having one at home. You can also substitute chopped or tiny shrimp for the clams.
