1/2 c. chicken broth
1/4 c. orange juice concentrate
1/4 c. soy sauce
2 Tbsp. cornstarch
2 Tbsp. brown sugar
1 Tbsp. bottled minced garlic
1/2 tsp. ground ginger
1/4 tsp.salt
1/4 tsp. crushed red pepper flakes
6 c. water
1 (8 oz.) pkg. Chinese noodles
1 Tbsp. canola oil
16 oz. pkg. stir fry vegetables (not frozen)
3/4 lb. skinless boneless chicken breast, cut into strips
1 c. diagonally sliced green onions
1/4 c. chopped dry roasted peanuts

Directions:
Directions:
Combine first 9 ingredients; stir well and set aside.
In a medium pot, bring water to a boil, add noodles, and cook for 3 minutes. Drain and set aside.
Heat oil in a large nonstick skillet. Add vegetables, and stir fry for 2 minutes.
Add chicken and green onions; stir fry for 3 minutes or until chicken is done.
Add broth mixture and cooked noodles.
Pour into a large bowl and toss until well mixed. Spoon onto plates and sprinkle with chopped peanuts.
