55g (2oz) butter
2 dessert apples, cored, each cut into 8 wedges
½ tsp sugar
1½ tbsp oil
4 x 200g (7oz) pork chops, trimmed
2 tbsp Calvados
2 French shallots, finely chopped
250ml (1 cup) dry cider
125ml (½ cup) chicken stock
150ml (5½ fl oz) thick (double/heavy) cream

Directions:

1. Melt half the butter in a frying pan, add the apple and sprinkle with the sugar. Cook over low heat, turning occasionally, until tender and glazed.

2. Heat the oil in a frying pan and sauté the pork chops until cooked, turning once. Pour the excess fat from the pan, add the Calvados and flambé by lighting the pan with your gas flame or a match (stand well back when you do this and keep a pan lid handy for emergencies). Transfer the pork to a plate and keep warm.

3. Add the remaining butter to the pan and cook the shallots until soft but not brown. Add the cider, stock and cream and bring to the boil. Reduce the heat and simmer for 15 minutes, or until reduced enough to coat the back of a spoon.

4. Season the sauce, add the pork and simmer for 3 minutes to heat through.

5. Serve with the apple.
