2 C. sugar
1/4 tsp. baking powder
1 tsp. baking soda
1 1/2 tsp. salt
3 eggs
2 C. shredded zucchini
1/2 C. raisins or chopped nuts
3 C. flour
1 tsp. cinnamon
1 C. oil
1 tsp. vanilla

Directions:
Directions:
Combine all ingredients until well blended. Pour into 2 well greased loaf pans. Bake at 325º for 1 1/4 hours. Makes 2 loaves.
