2 tsp active dry yeast

1.5 tablespoon sugar

1 3/4 cup warm water or more if needed

3.5 cup bread flour or high gluten flour

1.5 tsp salt

Directions:
In small bowl, add sugar, yeast and 1/2 cup warm water---do not stir, sit 5 minutes then stir.

Mix flour, and salt in large bowl, make well. Pour yeast mixture into well.

Pour 1/3 cup warm water into well, mix. Stir in more water if needed. End with moist and firm dough.

Knead dough for about 10 minutes until smooth and elastic.

Lightly brush oil (I use oiive) over formed dough ball in bowl. Cover bowl with damp towel. Let rise in warm place for one hour, until dough is doubled in size.

Pinch dough down and rest 10 more minutes.

Divide dough into 8-10 balls. Press finger in center of ball and shape dough into bagel, place on cookie sheet rest 10 minutes.

Boil a big pot of water.

Add bagels to water, boil 1-2 minutes per side (1 min makes soft dough like bagels)

Remove and brush with egg and topping of your choice place on oiled cookie sheet.

Bake at 425º for 20 minutes.
