1 C. Potato buds (dehydrated potatoes)
1 C. Boiling water
1 Egg
1 C. Flour
1 tsp. Salt

This recipe makes four large servings. For a large family gatherings, I make three times the recipe.

Directions:
Directions:
1. Mix the potato buds with the boiling water.
2. Let cool slightly and add whisked egg.
3. Mix in flour and salt.
4. Flour hands and roll mixture into dumpling shape then put dumplings into boiling water for 15 minutes, until they are floating.
5. Remove from boiling water and drain well.
Pour a little gravy over dumplings.

This is the Modern Version of Potato Dumplings. You can always use mashed potatoes instead of dried. The
texture may be different, depending of the moisture in homemade mashed potatoes. The flour amount may need to be adjusted.
