4 slightly beaten eggs
½ c. sugar
¼ tsp. salt
½ tsp. vanilla extract
2½ c. scalded milk
1 c. shredded coconut
nutmeg or cinnamon

1 pie crust

Directions:
Directions:
Blend eggs, sugar, salt & vanilla.
Add small quantity of scalded milk to the egg mixture & stir in.
Continue adding milk to egg mixture and stirring it in until it is all combined.
Stir in cocounut.
Pour into prepared pie crust.
Sprinkle with nutmeg or cinnamon

Bake 350º for 35-40 minutes until knife inserted in center comes out clean.
Cool before serving.
