6 eggs
2¼ cups vegetable oil
3 cups all-purpose flour
3 cups sugar
3 tsp baking soda
3 tsp baking powder
3 tsp ground cinnamon
½ tsp salt
4½ cups grated carrots
2 cups coarsely chopped pecans or walnuts

Cream Cheese Icing:
16 ounce powdered sugar
8 ounce cream cheese
1 tsp vanilla

Directions:

Preheat Oven 350º, grease and flour 13 x 9 inch baking pan

Beat eggs and oil in small bowl
Combine flour, sugar, baking soda, baking powder, cinnamon and salt in large bowl. Add egg mixture; mix well. Stir in carrots and pecans. Pour into prepared pan. Bake 30 to 35 minutes or until wooden pick comes out clean. Let cool completely on wire rack. Spread with cream cheese Icing.

Cream Cheese Icing:
Combine powder sugar, cream cheese, butter and vanilla. Beat until smooth.
