2 red onions, diced
4 garlic cloves, chopped
1-2 inches ginger root, grated
1 Tbsp. Coconut oil
1 Tbsp. paprika
1 Tbsp. coriander
1 tsp. cumin
1/2 tsp. ground bayleaf
3 qt. water
1 small butternut squash, peeled, seeded, and cubed
1 can pigeon beans
2 c. finely chopped jute leaves (may substitute okra and spinach)
1 1/2 c. smooth peanut butter
1-6 oz. can tomato paste
1-28 oz. can diced tomatoes

Directions:
Directions:
Cook onion, garlic, ginger, and spices in oil for about 10 minutes. Add water and squash. Bring to a light simmer, and cook fifteen minutes. Place peanut butter and tomato paste in blender. Fill the blender with broth from the soup. Blend until all peanut butter is thinned. Add the peanut sauce and all remaining ingredients to the soup. Note: We get Jute leaves frozen at small African grocery store.
