1 large onion, diced
2 celery stalks, chopped
6 garlic cloves, chopped
1 colored bell pepper, diced
2 Tbsp. coconut oil
2 Tbsp. cumin
1 Tbsp. onion powder
2 1/2 tsp. salt
2 tsp. basil
1 tsp. oregano
1 tsp. cilantro
1 qt. water
2-28 oz. cans white beans
1 can jackfruit
1/4 c. cornmeal
2 Tbsp. maple syrup
1 Tbsp lime juice
Directions:
Directions:
Sautee veggies in oil until soft. Break jackfruit into small bite sized pieces. Add jackfruit and seasonings. Add beans and two thirds of the water. Cook a few more minutes. Mix cornmeal and remaining water and add to soup. Cook until thick. Add maple and lime. Adjust to desired flavor. Top with fresh cilantro or parsley if desired.
