2-3 inches galangal root, peeled
2 stalks lemongrass, sliced lengthwise
1 qt. water
1 sm. onion, sliced
1 c. snow peas
1 sm. zucchini, halved and sliced
8 oz. baby bella mushrooms, sliced
10 lime leaves
1 tsp. salt
2 cans coconut milk
1 Tbsp. coconut sugar
3 Tbsp. lime juice
1 c. grapes tomatoes, halved
Cilantro to taste

Directions:
Directions:
Cook galangal and lemongrass in water 15 minutes. Add onion, and cook about 15 minutes. Add other vegetables, lime leaves, salt, and coconut milk, and cook on low for about 15 minutes. Remove galangal, lemongrass, and lime leaves. Add the coconut sugar and lime juice, adjust amounts to taste. Add tomatoes and cilantro just before serving.
