- 1/2 chicken (backbone removed)
- 2 tablespoons ground toasted cumin
- 1 tablespoon ground toasted coriander
- 1 tablespoon granulated garlic
- 1 tablespoon dried oregano
- 1 teaspoon All-Spice
- 1 tablespoon crushed Aleppo pepper
- 2 tablespoons kosher salt
- 1/4 cup olive oil

Directions:

1) Preheat oven to 400°F. 2) Use a mortar and pestle to combine the spices with the olive oil to form a paste. 3) Rub the paste evenly onto the chicken. 4) Place the chicken on a baking sheet, skin side down. Roast for about 15 minutes. 5) Flip the bird skin-side-up and continue to roast for 30 more minutes or until the internal temperature of the chicken reaches 160°F.
