1 1/2 pounds baby carrots, rinsed
2 tablespoons balsamic vinegar
1 tablespoon honey
2 tablespoons olive oil
Salt, pepper, and parsley

Directions:
Directions:
Preheat oven to 400º.

In a medium sized bowl, whisk together honey, balsamic vinegar, and olive oil. Toss the carrots in the mixture, and coat well.

Place carrots in greased baking dish, and pour any remaining sauce over top. Bake for 40 minutes, stirring once, until tender and caramelized.

Remove from oven, and drizzle with more honey. Garnish with salt, pepper, and parsley.
