1 1/2 pounds chicken breast, cut into chunks
1 red pepper, diced
1 yellow pepper, diced
1 orange pepper, diced
9 ounces snow peas
1 tablespoon ginger, minced
1/3 cup raw cashews
1 teaspoon red pepper flakes
2 tablespoons olive oil

Sauce:
2 tablespoons red wine vinegar
2 tablespoons ketchup
4 tablespoons soy sauce
2 tablespoons sugar
1/4 cup water
3 teaspoons cornstarch

Directions:
Directions:
Mix the sauce ingredients, and set aside.

In a large skillet, heat the olive oil over medium high heat. Add chicken, and cook for 5 to 6 minutes. Add the peppers and ginger, and cook (stirring occasionally) for another 5 minutes. Add snow peas, and cook 1 more minute. Add cashews and sauce to the skillet, and cook 1 minute over high heat until the sauce thickens.

Serve over rice.
