* 2 cups of peeled and thinly sliced white or yellow onion
* 1/2 cup of cider vinegar
* 1/2 cup of white vinegar
* 1/2 cup of white sugar
* 1 Tbsp of kosher(course) salt
* 2 teaspoons celery seed or sesame seed
* 1/2 teaspoon cayenne pepper

Cut the onion in half lengthwise. With a sharp knife cut the onion into paper thin slices. Place the onion slices into a non reactive dish such as glass or plastic. In a medium bowl combine the remaining ingredients. Whisk thoroughly to dissolve the salt an sugar. pour the vinegar mixture over the onions and stir to coat them. Set aside at room temperature for 3 hours, stirring the onions occasionally. Drain the onions and store covered in the refrigerator.
These onions are very good on hot dogs or other meat sandwiches. We like them on tuna salad sandwiches.
