Crust:
* 1 1/2 cup whole raw almonds
* 1 1/2 cup regular oats ( for gluten free use GF oats)
* 1/2 tsp kosher salt(optional)
* 1/4 pound pitted dates (about 20 dates)coarsely chopped
* 1/4 cup of coconut oil; melted
Date filling:
* 1/2 Lb pitted dates( about 40 dates)
* 3/4 cup water
* 1/8 cup honey or maple syrup

For the filling:put all three ingredients in a sauce pan and cook over low heat stirring frequently for 10 to 15 minutes until thickened. Let cool to warm.
For the crust: Line an 8 inch square pan with 2 sheets of parchment paper going opposite ways. In a food processor ,process the almonds ,oats and salt until a fine crumble forms. Add the dates and process until crumbly again. Add the coconut oil and process until sticky, You can add a bit more oil if the dough is to dry.
Remove from the processor and set 3/4 cups aside. Put the remainder in the parchment covered pan. Press the mixture very firmly and evenly in the pan. Add the cooled date filling to the pan and spread evenly on top of the crust with a spatula.
Sprinkle the 3/4 cup of crust dough, that was set aside, on top of the filling and gently press down with your fingers or the spatula.
Refrigerate in the fridge until firm for at least an hour, preferably overnight. Cut into squares and serve . Store in the fridge or freezer.
