* 1 sirloin pork roast ( 3 lbs)
* 1 Tbsp Mrs. Dashes garlic & herb spice
* 1 Tbsp olive oil
* 2 cups coarsely chopped onion
* 2 14.5 oz cans of vegetable broth
* 2 10.75 oz cans of golden mushroom soup
* 6 cups potatoes peeled and cut into 1 1/2" pieces
* 4 cups carrots peeled and cut to size of baby carrots

Preheat oven to 350*f. Rub the meat liberally with Mrs Dashes seasoning, In a frying pan heat the olive oil on medium heat and sear the meat on all sides.
Place the onions in a roasting pan and put the browned roast in the roaster. In a bowl mix together the broth and the soup and pour on top of meat in the roaster. You want to get the liquid in the roaster at least half full. You may have to add more broth or soup depending on the size of your roaster. Bake for 3 hours covered. Add the vegetables for the last 45 minutes of baking time. Remove the meat and let stand for 10 minutes prior to slicing and serving.
