Chicken Noodle Casserole Recipe

1 T. olive oil
3 c. mushrooms
2 stalks celery, diced
3 carrots, diced
1 small onion, diced
1 t. garlic powder
32 oz. chicken stock (1 qt.)
1/2 t. thyme
8 oz. cream cheese (can use 1/3 less fat)
1/2 c. Parmesan cheese.
6 oz. No Yolk Noodles, not cooked
1 1/2 T. flour
2 c. cooked chicken, diced (1 large boneless, skinless chicken breasts

For Topping:
1 c. Panko Breadcrumbs
1 T. butter, melted
1/4 t. salt
1/4 t. pepper

Directions:
Directions:
Mix topping and set aside. Heat oil in sauce pan. Saute mushrooms, celery, carrots, onion and garlic powder for 3 to 4 minutes. Add chicken stock and thyme and bring to a boil. Add cream cheese, Parmesan and noodles. Stir until well blended. Sprinkle in flour, stir and cook for 1 to 2 minutes or until thickened. Fold in chicken and pour into casserole dish. Sprinkle on topping.

Bake uncovered for 15 minutes or until topping is crispy and golden. Let cool 10 minutes to let casserole set-up before serving.

NOTE: To save time, buy cooked chicken from your favorite restaurant or grocery. You could cook it in a small crock pot for 4 hrs. on high or 8 hrs. on low. You could bake it for 20 - 30 min. at 350º until no longer pink. You could grill it for 20 - 25 min. until no longer pink.
