⅓ cup peanut oil
½ cup finely chopped green onion
1 cup julienne tips smoked ham or bacon* (I like chopped bacon!)
3 cups cooked rice
½ cup sliced water chestnuts
2 eggs, slightly beaten
3 Tbsp. soy sauce
Chopped cilantro
salt and pepper to taste

Directions:

Heat the peanut oil and lightly saute onions and bacon (or ham). Blend in the rice and water chestnuts. Stir in beaten eggs and soy sauce and cook until eggs are mixed. Taste for seasoning.
