1-2 lbs ground beef
2 cans tomato soup
1 small onion, chopped
½ can water
1 can enchilada sauce
12 corn tortillas
salt shredded cheddar/monterey jack cheese
(Can add 1 can of red kidney beans or black beans if using 1 lb. of beef)

Directions:
Directions:
Preheat oven to 350º. Brown meat with onion. Drain fat. Add soup, water and enchilada sauce. Salt as desired and simmer 15-20 minutes. Tear tortillas and layer on bottom of greased casserole dish. Layer with meat sauce, then cheese. Repeat layers, ending with cheese on top. Cover with foil. Bake 35-40 minutes. Uncover and bake until cheese is bubbly.
