4 chicken breast,
flour
1/2 cup butter, soften
1/2 of a lemon--use juice and grated rind
1 T. parsley finely chopped
1 egg
2 T. water
Bread crumbs--I like to use hamburger or hotdog buns

Directions:
Place each chicken breast between sheets of wax paper. Using rolling pin, pound until thin, being careful not to get holes in it (approximately 1/4 inch thick). Remove from wax paper. Season with salt and pepper. Set aside. Cream together butter, lemon juice and rind, and parsley. Add a portion in center each chicken breast. Do not put close to edge of chicken breast. Fold both long sides of breast over toward center. Roll up from one end like a package, trying to secure so butter will not leak out. Can use toothpicks. Mix flour, salt and pepper in plate. Roll chicken in flour (helps to seal). In shallow bowl mix egg and water. Dip the chicken rolls in the egg mixture and then in bread crumbs. Cover completely. Chill for 1 hour. Deep fry in oil heated to approximately 350º and cook chicken until golden brown (about 7-10 minutes). Chicken will float to top of oil so you will need to turn so each side will brown. Be sure chicken is done.
