4 boneless chicken breasts
¾ cup bread crumbs
¾ cup parmesan cheese
3 Tbsp. chopped parsley
2 tsp. salt
¼ tsp. WHITE pepper
12 Tbsp. butter
1 clove garlic
2 lemons
paprika

Directions:
Directions:
Preheat oven to 350º. Pepper each breast well. Blend together bread crumbs, cheese, parsley, and salt with a fork. Melt butter and press garlic into it. Simmer 3 minutes. Dip chicken into the butter and then into bread crumbs. Roll each piece tightly and fasten with a toothpick. Place in buttered baking dish. Sprinkle chicken liberally with lemon juice, remaining butter and sprinkle with paprika. Bake 1 hour, basting twice.

When I was cooking for people, one of my clients asked if I would include this in my menu. It was one of her family's favorite recipes. We loved it, too. It's easy and yet you could serve this to company because it is pretty and delicious. Serve with rice and asparagus for sides.
