2 lb hamburger
1 small onion chopped
2 garlic cloves, minced
3 Tbsp chili powder
1 Tbsp ground cumin
1 tsp salt
1 tsp pepper
1 can (4.5 oz) chopped green chiles
2 cans (10 oz) red enchilada sauce (1 hot & 1 mild, mix together)
1 pkg tortillas
1 pkg shredded Monterey Jack cheese
1 pkg shredded medium or sharp cheddar cheese
1 can sliced black olives
Serve with Sour cream

Directions:

Brown hamburger with onions, chiles, spices and salt & pepper, drain. Mix cheeses together. Spray 9x13 inch casserole with cooking spray. Spoon very thin layer of enchilada sauce on bottom of casserole. Fill each tortilla with 1/3 cup hamburger mixture, spoonful of enchilada sauce, and sprinkle of cheese. Roll up and place in casserole. Continue with the rest of the tortillas until hamburger mixture is gone. Cover with remaining enchilada sauce. Sprinkle with remainder of cheese. Put sliced black olives on top and cover with foil. Bake 30-35 minutes in a 350º oven. Remove the foil and continue to bake until cheese is golden brown.
