Ingredients: 2 oz. mascarpone cheese (cream cheese may be substituted) 4 ripe Haas avocados 2 T. lime juice, freshly squeezed 1 or 2 cloves garlic, minced 1 tsp. cilantro or parsley 1 plum tomato, peeled, seeded, and chopped 4 green onions, thinly sliced (2 T. minced sweet onion may be substituted) 2 slices bacon ¼ c. chopped black olives salt & pepper to taste ½ c. sour cream

Directions:Fry bacon until crisp. Allow to drain and cool. Then crumble and set aside for garnish.
Slice or chop black olives, cover and refrigerate.
Allow cream cheese to come to room temperature or soften in microwave for 10 seconds. Scoop out the avocados and add to cream cheese along with lime juice and garlic. Mash with a fork until just a bit lumpy. Stir in salt, pepper, cilantro, onion, and tomato. Spread in a deep serving dish and smooth the top. Spread sour cream over top and seal along the edge (be sure all avocado mixture is covered, even if you have to add just a bit more sour cream). Cover and refrigerate until ready to serve.
Sprinkle on bacon bits and sliced black olives just before serving.
Serve with nachos or any dish where guacamole is needed. |

Notes: The best thing (aside from the flavor) about this dish is that you can make it ahead and don't have to wait til the last minute. Covering the mixture with sour cream seals out the oxygen that causes the avocado to darken. I have made this the day before and it is still beautifully green!
One hint, don't over do the raw garlic; it will overpower everything. Trust the recipe.
