* 1/4 cup butter
* 3 Tbsp flour
* 2 cups half & half
* 2 Tbsp white wine
* 1 cup sliced mushrooms, sauteed in 1 Tbsp of butter
* 2 slices of firm white bread (remove crust)
* 2 generous slices of roasted turkey breast
* 1/4 cup grated Parmesan cheese
* 1/4 cup grated Cheddar cheese
* 1/4 tsp of both salt and pepper or to taste

To make Sauce: Melt 1/4 cup of butter in a small sauce pan over medium heat. Stir in flour , and salt and pepper to taste. Stir until flour is blended with the butter. Slowly stir in the cream, increase heat slightly and continue stirring until sauce thickens. Stir in the wine and sautéed mushrooms. Continue stirring until sauce is medium thick.
To make Sandwich: Toast bread and place a slice in each of two small individual casserole dishes and layer with turkey breast. Divide the sauce between the two sandwiches. Sprinkle with cheeses. Place casseroles under broiler until cheese is melted , serve hot.
Note: Cook enough toast to line the bottom of the casserole dishes , and cut them to fit the dish if it is round or oval shaped.

Cedric Adams was a radio personality during the 1930's 40's and 50's. He was on WCCO and was the newscaster. He also wrote a column in the Minneapolis paper on happenings in the Twin Cities and various recipes he found and liked. He used to eat lunch at Charlie's Café Exceptional and they developed this sandwich for him and put his name on it.
Charlie's restaurant was on the corner of 7th street and 4th ave south in down town Minneapolis. It was a really upscale restaurant and in the 1980's when Ann would join us for lunch around Christmas time she would have a Tom & Jerry and the Cedric Adams Sandwich. It was one of her favorite meals.
