3-8oz. packages cream cheese
1 cup sugar
1 tsp. vanilla extract
5 chicken eggs

Crust
15 graham crackers (crushed or rolled fine)
2 Tbsp. sugar
2 Tbsp. butter or oleo

Topping
1 pint sour cream
1 tsp. vanilla extract
1/4 cup sugar

Directions:

Cake
Soften the cream cheese at room temperature and then cut into chunks. Put the softened cream cheese chunks into a bowl. Add eggs one at a time and beat after each additional egg. Add sugar slowly while mixing. Add in the vanilla and mix until smooth and set aside.

Crust
Mix the graham crackers, sugar and butter together.
Press or pat the graham cracker mixture firmly into the bottom of a 9X13 inch baking pan.

Pour the cream cheese mixture into the pan with the graham cracker crust. Bake at 350º for 40 minutes or until a toothpick
comes out clean after inserting it into the cake. While the cake is baking, prepare the topping.

Topping
Mix the sour cream, sugar and vanilla together until smooth.

Once the cake is done, take out of oven and let cool for 10 minutes. Spread the topping on top of the cake. Bake the cake with topping for 10 minutes more. Once done, let it cool down and then put it in the refrigerator to cool more.

Yes, Aunt Thelma was known worldwide, ok, within the family, for her cheesecake.
Actually throughout the years , she made it without the recipe card (with love, of course).
Luckily , I helped at times , licking the beaters, and remembering the “ how to.”
I am sure Aunt Thelma would be pleased to know at least she is famous for her cake.
