Boil eggs. I cover the eggs in water and bring to a boil. Cover and turn off heat. Let them stand on stove eye for 18-20 minutes. Drain water. Fill pan with cold water. Take one egg at a time, cracking all over while you hold it under running cold water. Peel. (Fresh eggs are harder to peel.) Cut eggs in half and remove egg yolks. Mash yolks with fork. Start by adding approximately 1 1/2-2 teaspoons of mayonnaise per egg. Salt as you would any egg. Pepper very heavy (more than you think is necessary). Taste and adjust seasonings if necessary. This recipe takes practice to get it as you like it.
