Ingredients: 1 jar or can of tomatoes (or equivalent amount of fresh tomatoes, skinned) Optional: your choice of ground meat or meatballs 1 small can tomato puree or tomato paste 1 onion 1 pepper (I used Anaheim but any will do) 3-4 cloves garlic splash of olive oil basil, oregano, salt, red pepper flakes

Directions:Dice onion, pepper and garlic in a chopper or food processor (they should be very small). In a large sauce pan, put enough olive oil to cover the bottom thinly. Cook the chopped vegetables until fragrant, but not browned. If you are using ground meat, add this now and cook until done. Add the tomatoes and simmer on lowest setting, stirring to combine and break down the tomatoes. If you prefer a smooth sauce, you can use an immersion blender at this point if you have not added meat. Add the tomato puree/paste. Cook for about a half hour on the lowest setting with a lid placed so that the sauce pot is vented. Watch carefully to ensure it does not burn on the bottom. If you are using frozen meatballs, add these now. Add the herbs and spices and cook for another half hour to an hour. Spoon over your favorite pasta and serve with bread. You won't want a drop of sauce to go uneaten! |
