2 cups flour, sifted
31/2 tsp. baking powder
1/2 tsp. salt
1/2 tsp. cream of tartar
1 Tbsp. honey
1/2 cup cold butter cut into 1/2 inch cubes
2/3 cup milk

Directions:
Preheat oven to 450º. Place dry ingredients in a food processor and pulse to combine. Add butter and pulse until the butter looks like peas. Pour into a mixing bowl and add the milk and honey and stir until it comes together. Place on a lightly floured surface and knead several times to work the gluten Pat the dough with your fingers to about 3/4 inch high. Cut the dough with a biscuit cutter, a tin can or a glass, but don't use a seesaw approach as that will reduce the rise. If you want soft edges place them about an inch apart on a baking sheet covered with baking paper, or using a knife and cut them square. Let the biscuits rest for 20 minutes before baking. Bake at 450 for 10 minutes or until they are done to your liking. Brush with melted butter. Makes 12.

My first attempt at making biscuits was a complete disaster. After baking, I seemed to produce lightly browned hockey pucks! This recipe saved me. It is one of my go to recipes when I feel the urge to bake biscuits.
