1 can yellow corn
1 can black beans, rinsed and drained
1 can black eyed peas, rinsed and drained
1/4 red onion, finely diced
1/4 c. cilantro, chopped
1/4 c. vinegar
1/4 c. sugar
Tortilla scoops or chips

Directions:
Directions:
Stir vinegar and sugar together until sugar starts to dissolve. Taste. Add more sugar if too strong or more vinegar if too sweet. In a separate bowl, mix the rest of the ingredients and pour sweet/sour mix over top. Stir well. Store in refrigerator for up to 4 days. Best served at room temperature.
