1 Angel food (boxed cake mix) 16 oz...
3 or 4 mandarin oranges, juiced, need 3/4 cup....
1/2 cup freshly squeezed lemon juice, about 4 lemons...
Zest of 1 lemon, divided...

FROSTING

2 cups chilled heavy whipping cream or 1, 8 oz. packaged Cool Whip,, thawed...
2 T sugar...
1/2 cup mandarin orange juice, 3 or 4 oranges...
1/4 cup fresh lemon juice , 3 or 4 lemons...
1/2 t lemon zest...
1/2 cup toasted flaked sweetened coconut...
3 mandarin oranges, peeled and set on top of cake and/or on individual plates... ...

Directions:
Directions:
Preheat oven according to directions on the cake mix package...
Combine the juices for the cake, make cake batter according to package directions using juices instead of water...
Stir in 1/2 lemon zest...
Bake according to directions on cake box...

Cool cake...

Frosting....
In a large glass or metal bowl , beat cream until soft peaks form...
Add sugar, juice and remaining lemon zest, beat until soft peaks return...
Remove cake from pan and place on a serving plate....
Spread the whipped cream over cake, garnish with mandarin orange sections and sprinkle the top of cake with toasted coconut....ENJOY!

To toast coconut
Take 1/2cup of sweetened flaked coconut and put it 2 inches from top of oven broiler and broil, watching it carefully so as not to burn coconut...
It only takes 30 seconds to start to brown, stir every 15 seconds until you get it browned and be careful not to burn coconut.......
