Ingredients:  
16 oz. rotini pasta, cooked and drained
3 medium tomatoes, diced
2-3 cups shredded Cheddar
small bunch green onions
3 oz. sliced pepperoni
cup vegetable oil
cup red wine vinegar
⅔ cup grated Parmesan cheese
2 teaspoons oregano
1 clove minced garlic
salt and pepper to taste

Directions:
In a large bowl, combine first 5 ingredients. In a small bowl, combine remaining ingredients. Pour oil mixture over pasta mixture. Stir well and refrigerate.

This recipe comes from my dear friend Laura Fuller. I love to see her coming to any event with this pasta! It can be served as a side dish or a main dish, and leftovers keep well in the refrigerator.
