3 cups squash, chopped
1 onion, diced
2-3 eggs
½ cup evaporated milk
¾ stick margarine
1-2 cups shredded Cheddar cheese
1 teaspoon salt
½ teaspoon pepper
2 cups Saltine cracker crumbs

Directions:
Directions:
Boil squash and onions together until soft. Pour into a colander to drain and mash squash with a potato masher in the colander. Pour back into pot used for boiling and add all other ingredients, reserving 1 cup of Saltine crumbs for the top. Bake in a greased casserole dish at 350º for 40 minutes.

This recipe was passed down from family friend JoAnn White. It is Frazier's favorite Thanksgiving side dish. I really don't pay much attention to the portions on the recipe; just add as much egg, cheese, margarine, and crackers as you like!
