2 cups sifted flour
2 tsp baking powder
1 ½ tsp baking soda
1 tsp salt
2 ¼ tsp cinnamon
4 large eggs
1 ½ cups oil
2 cups sugar
2 ¼ cups coarsely grated carrots
1 8oz can crushed pineapple (drained)
¾ cup chopped walnuts or pecans
½ cup raisins
Frosting:
½ cup butter or margarine
1 8oz package cream cheese
1 ½ tsp vanilla
1 1lbs package of confectioner’s sugar (start with ½ pound and add to taste)

Sift together flour, baking powder, baking soda, and cinnamon in a large bowl. In another large bowl, mix sugar, oil and eggs. Add flour mixture a little at a time, mixing well after each addition. Add carrots, pineapple, nuts and raisins and blend thoroughly.
Pour batter into either, three greased and flour cake pans, or one 9X12 greased and floured cake pan (Colleen’s preference).
Bake at 350 for 35 to 40 minutes. If removing from pan, let cool for about ten minutes before removal.
Let cake cool completely before applying cream cheese frosting.
Frosting: Soften butter and cream cheese. Mix together with vanilla. Sift (or mix) in confectioner’s sugar and blend well.
