1/2 c. chili powder
1/2 c. corn starch
1/4 c. salt
2 T. ground black pepper
3 T. paprika
1 T. onion powder
2 T. garlic powder
2 T. dried leaf oregano (Mexican preferred)
2 T. ground cumin
1-2 tsp cayenne pepper
2 tsp ground coriander
1 T. unsweetened cocoa powder

Combine all ingredients in food processor and pulse until well combined. Or, whisk together in bowl. Store in airtight container. (Adjust or omit cayenne for more or less heat)
FOR TACO MEAT: Use 1/4 cup seasoning mix for each pound of ground meat. In large skillet, cook 1 pound meat, drain fat. Add 1/4 c. seasoning, stir to coat meat, add 3/4 c. water & stir. Bring to boil, lower heat & simmer 5-10 min. until mixture thickens.Add salt if desired. Also good for ground turkey or chicken.
