* 2 cups sliced zucchini
* 1/2 cups thinly sliced onion
* 1 tsp dried oregano
* 1 Tbsp olive oil
* 4 fish fillets (see notes) 4 to 6 oz. each
* 1/4 tsp salt
* 1/8 tsp pepper
* 1 medium tomato chopped
* 1/2 cup shredded Italian cheese

In a large non stick skillet coated with cooking spray, saute the vegetables and oregano in oil for 5 minutes or until onions are tender.
Sprinkle the fillets with salt and pepper and place in the pan on top of the vegetables. Sprinkle with tomato. Reduce heat; cover and simmer for 10 minutes or until fish flakes easily with a fork. Sprinkle with cheese , cover and let stand for a couple of minutes to melt the cheese. Serve immediately
Note: A) The fish we used was Tilapia. The recipe used Orange Roughy. Cod or any other firm white fleshed fish would work as well.
B) I soaked the frozen filets in salt water (1 tsp salt to 1 cup water) until they thawed then rinsed in cold water. If you do this it cleans and freshens the fish and you can skip the salt seasoning.
