1 cup all purpose /whole wheat flour
1 cup Sweet Potato (cooked/mashed)
1/2 cup flour for dusting (extra)

Directions:
First Boil/steam your sweet potatoes. Remove skin and mash up. Then stir your flour into your mashed potato
until its a dough texture. Don't overwork your dough for you don't want it to get sticky. Once this is completed flour your work area and roll your dough into a log and cut into 6 equal portions. Then take each section and pat into extra flour on each side working into a flat dough ball also pat the sides for better formation. After all the dough balls are completed heat up a skillet or flat frying pan and roll out your dough ball into a 2 inch flat Roti (Switch sides so there is evenness) Then put into the skillet (Dry) flip every 30 seconds until moisture is gone and air pockets browned and firm. Make sure to put roti aside on top of a damp clean tea towel flipping in every 3rd for even temperature.
