1 egg Vegetable oil for frying
1 tsp white pepper
1½ tsp salt
2 chicken breasts, cubed
½ cup corn starch
¼ cup flour

1 tbsp oil 1½ tbsp water
2 tsp garlic chopped 3½ tbsp sugar
1 tbsp ginger 1 tbsp orange zest
½ tsp red chili flakes 1 tbsp corn starch slurry (1 tbsp corn starch dissolved in 1 tbsp water)
1 tbsp rice wine
1½ tbsp soy sauce
5 tbsp vinegar

Chopped green onion for garnish

Directions:

Combine egg, white pepper and salt in a mixing bowl. Add the cubed chicken breast, coating well.

In another bowl, combine cor starch and flour. Add the coated chicken to the flour mixture. Stir to coat.

Working in batches, fry the coated chicken in oil until golden and done. Remove with slotted spoon, drain on paper towel and place on cookie sheet place in oven at 300º to keep warm and crispy. Continue until all chicken is fried.

In a large pan or wok add oil, garlic, ginger and red chili flakes. Stir fry until fragrant. Add rice wine and stir for a few seconds. Proceed to add all the other sauce ingredients, including soy sauce, vinegar, water, sugar, and orange zest.

Thicken sauce with corn starch slurry. Add chicken and toss to coat. Garnish with green onion.

Serve with rice.
