1½ cups flour
½ tsp baking powder
½ baking soda
½ tsp salt
1 cup sugar
1 tsp vanilla
⅓ cup lemon juice
3 eggs
2 tbsp butter, softened
1 tsp lemon extract
½ cup oil (coconut oil recommended)

ICING
1 cup powdered sugar, plus 1 tbsp
2 tbsp milk (whole or 2%)
½ lemon extract

Directions:

reheat oven to 350º. Grease well a 9 x 5 loaf pan. Combine flour, baking soda, baking powder and salt in a bowl. Use a mixer to blend the eggs, sugar, butter, vanilla, lemon extract and lemon juice in a medium bowl. Pour wet ingredients into the dry ingredients and blend until smooth. Add oil and mix well. Pour batter into loaf pan. Bake for 45 minutes or until toothpick comes out clean.
