Poppy Seed Chicken Casserole Recipe

3 pounds shredded cooked chicken
2 cans cream of chicken soup
1 (16 oz.) container of Sour Cream
2 sleeves Ritz crackers, crushed
4 TBS poppy seeds
2 sticks of butter, melted

Preheat oven to 325.

Stir together soup and sour cream. Add chicken and stir together. Place in a 9x13 casserole dish.

In a separate bowl, stir together crushed Ritz crackers, poppy seeds and melted butter. Sprinkle on top of chicken/soup mixture

Bake 30-40 minutes, or until top of casserole is browned and sauce is bubbly.

Serve over rice.
