* 2 qts red potatoes, cooked, peeled & diced
* 10 strips bacon
* 1 cup onion chopped
* 3/4 cup white vinegar
* 1½ cups water
* 1 Tbsp butter
* 1 cup sugar
* 1/4 cup beer(optional)
* 3 Tbsp cornstarch
* 1 tsp salt

Chop bacon and fry in a sauce pan. Remove bacon, drain and set aside. Reserve two Tbsp of bacon fat in pan and fry onions until tender. Add vinegar, water and butter. In a bowl, mix together sugar, beer, cornstarch and salt. Add this mixture to onion vinegar mixture and bring to a boil to thicken. Stir in the bacon bits. Pour over potatoes in a casserole dish and stir to mix.
Bake covered, at 225º about 1½ to 2 hours or until heated through.
* This dish can be put together the day before and refrigerated overnight and then baked. It will have to bake longer to heat through.
