2 lbs. corned beef (flat cut)
2 T. brown mustard
8 medium sized red potatoes
3 T olive oil
salt, pepper

4 T butter
diced onion
4 cloves garlic, minced
1/4 tsp. thyme
1/2 tsp. oregano
1/2 tsp. basil
1/4 tsp. paprika

Directions:
Directions:
1. Spread mustard and the seasoning packet over your corned beef. Bake in a 325º oven covered for about 3 hours, until tender. Take out of oven, cool down to room temp. then refrigerate for easier cutting.
2. Cut potatoes into wedges, mix with olive oil and salt and pepper. Roast in a 425º oven for about 30 minutes. Also cool way down for easier cutting.
3. Cube your corned beef and potatoes.
4. Melt butter in a large skillet over medium high heat. Add the diced onion and saute with minced garlic. Add the potatoes and thyme, oregano, basil and paprika. After this cooks for about 10 minutes, add your cubed corned beef and cook for 5 more minutes.
5. Serve with toasted bread, preferably rye.
