"As I ate the oysters with their strong taste of the sea and their faint metallic taste that the cold white wine washed away, leaving only the sea taste and the succulent texture, and as I drank their cold liquid from each shell and washed it down with the crisp taste of the wine, I lost the empty feeling and began to be happy, and to make plans."--Ernest Hemingway

Directions:
Soak beans overnight in cold water. Drain. Pick and rinse beans. Add 4 cups cold water, cover, heat to boiling, simmer 30 minutes. Drain. Place onion slices in bottom of 6 cup casserole. Mix seasonings and put into pot. Add beans, and water to cover. Arrange pork slices on top. Cover and bake 250F for 7 hours. When beans are tender, remove 1 cup of beans, mash, then stir back into pot carefully. Cover and continue to bake. Add water as needed to keep beans just covered. One hour before serving remove cover to darken beans. Or cook in Instant Pot Pressure Cooker for 30 minutes.

Personal Notes:
Personal Notes:
Instant pot is much quicker and turns out amazing. Soak beans overnight. Cook beans 30 minutes in Instant Pot. Then add sauce and seasonings and pork and cook 15 - 20 minutes.
