2 cups corn, canned or fresh
1 pint cherry tomatoes halved
½ cup finely diced red onion
¼ cup chopped cilantro

DRESSING
2 tbsp olive oil
½ tsp grated lime zest
1 tbsp lime juice
¼ tsp each salt and pepper

Directions:
Directions:
Combine corn, avocado, tomatoes, onion and cilantro in a large serving bowl. Mix together the dressing ingredients in another bowl and pour over the vegetables, toss gently to mix.
