2 T. Olive Oil
˝ Cup finely chopped shallots (or green onions)
˝ teaspoon crushed red pepper
˝ Cup vodka
1 pint whipping cream
1 large can of tomato sauce
16 oz Rigatoni
1 1/3 cup Asiago Cheese (4 oz.)
4 T. fresh parsley or 2 t. dried
4 T. fresh basil or 2 t. dried
salt and pepper to taste

1. Heat oil in a large skillet over medium heat
2. Add shallots and crushed red pepper; sauté until translucent (about 5 minutes)
3. Add vodka and ignite with a long match
4. Simmer until flames subside, shaking pan occasionally about 2 minutes
5. Increase heat to high, add cream and boil until mixture thickens, about 3 minutes
6. Add tomato sauce and boil about 2 minutes
7. Cook pasta until tender, reserving ˝ cup liquid
8. Bring sauce to simmer
9. Add pasta, 2/3 c. cheese, parsley, basil to skillet and toss to coat
10. Add reserved cooking liquid if too dry
11. Season with salt and pepper
12. Transfer to large bowl
13. Sprinkle with remaining cheese and serve

You can use Italian sausage in this recipe as well. Boil or fry some sausage. Cut it into disc shaped pieces once it is cooked. Add it to the sauce when it is simmering.
