"Plain fresh bread, its crust shatteringly crisp. Sweet cold butter. There is magic in the way they come together in your mouth to make a single perfect bite."--Ruth Reichl

Ingredients:
Ingredients:
1-1/2 lbs. ground beef
1/2 cup regular rice (not instant)
2/3 cup of milk
1 T instant mixed onion
1/2 tsp. salt, 1/2 tsp. pepper
1 10-1/2-oz can condensed tomato soup
1/2 cup water

Directions:
Directions:
Combine ground beef, rice, milk, onion, salt and pepper in bowl. Mix lightly but well. Round tablespoons into balls and place in 9x13 baking pan. Combine tomato sup and water in bowl, mix well. Pour over meatballs. Cover pan tightly with lid or foil.

Bake 350º for 1 hour or done. Makes -8 servings.

If freezing, just place them in an air-tight container. When you take them out to thaw, I usually place them frozen in a low (300º) oven and add a mixture of ketchup and water to just keep them moist while they thaw. They are always better the second time around.
